Getting your probiotics in by making your own sauerkraut

Yummy yummy..do love making sauerkraut..so easy!! It is the simple art of massaging cabbage😉 Nutrition plays a vital role in keeping your body in balance. One of the fundamental requirements is getting enough probiotics in your diet to maintain a healthy balance in your gut. A healthy gut is a healthy mind, digestive and immune system. Sauerkraut is one of the simple ways to ensure that we are getting a good quantity of probiotics in on a regular basis. Can add it as as side to breakfast, lunch and dinner.

Here's how to make it:

Recipe:

- You will need a minimum of half a head of a large green or red cabbage to get a decent portion size. Make sure that the cabbage is not too hard and the leaves look soft enough.

- Keep one large cabbage leaf aside (as this will act as the sealant to your sauerkraut during the fermentation phase.)

- Grate your cabbage to your preferred thickness.

- Pour half of the grated cabbage into a a large bowl.

- Sprinkle a teaspoon of Himalayan Salt over your cabbage.

- Now massage your cabbage for about 10 minutes or until the cabbage has released all its juices into the bowl.

- Transfer the massaged cabbage and juice into your airtight pickling jar.

- Repeat process for the remaining cabbage.

- Then place the large cabbage leaf on top, to create the 'airtight lid' inside the jar.

- A washed river stone can be used to as a weight to submerge the cabbage in its juices.

- Allow to ferment for a week to 2 weeks before it is ready.

- Also release the lid daily incase of any gas build up from the fermentation process.
